Classic Garlic Butter Steak Bites with Cheesy Smashed Potatoes

1 lb sirloin steak, cut into bite-sized pieces
3 tbsp butter
3 garlic cloves, minced
1 tbsp olive oil
Salt and pepper to taste
1 tbsp fresh parsley, chopped (for garnish)
For the Cheesy Smashed Potatoes:

1 lb baby potatoes
2 tbsp olive oil
1 cup shredded cheddar cheese
1/4 cup grated Parmesan
2 tbsp butter, melted
2 garlic cloves, minced
Salt and pepper to taste
1 tbsp fresh chives, chopped (for garnish)

For the Potatoes: Preheat oven to 400°F (200°C). Boil baby potatoes in salted water until fork-tender, about 15 minutes. Drain.
Place boiled potatoes on a greased baking sheet. Gently smash them with a fork or potato masher.
Drizzle with olive oil, melted butter, and garlic. Season with salt and pepper. Top with cheddar and Parmesan cheese.
Bake for 20-25 minutes until crispy and golden. Garnish with chopped chives.
For the Steak Bites: Heat olive oil in a skillet over medium-high heat. Season steak bites with salt and pepper.
Cook steak bites in batches until browned, about 2-3 minutes per side. Remove and set aside.
In the same skillet, melt butter and sauté garlic until fragrant. Add steak bites back into the skillet and toss with garlic butter.
Garnish steak bites with chopped parsley and serve with cheesy smashed potatoes.
Notes:

Add a squeeze of lemon juice to the steak for a bright flavor.
Serve with a side of roasted veggies for a balanced meal.
