For the Shrimp:
1 lb large shrimp, peeled and deveined (tails on)
4 cups water
1 lemon, sliced
2 cloves garlic, smashed
1 tsp salt
1/2 tsp black peppercorns
1 bay leaf
Ice bath (for chilling the shrimp)
For the Cocktail Sauce:
1/2 cup ketchup
2 tbsp prepared horseradish (adjust to taste)
1 tbsp fresh lemon juice
1 tsp Worcestershire sauce
1/2 tsp hot sauce (optional)
1/2 tsp smoked paprika
For Garnish:
Lemon wedges
Fresh parsley, chopped

Cook the Shrimp:
Bring water, lemon slices, garlic, salt, peppercorns, and bay leaf to a boil.
Reduce heat and add shrimp.
Cook for 2-3 minutes until shrimp turn pink and opaque.
Immediately transfer shrimp to an ice bath to stop cooking.
Make the Cocktail Sauce:
In a bowl, whisk together ketchup, horseradish, lemon juice, Worcestershire sauce, hot sauce, and smoked paprika.
Adjust seasoning to taste.
Assemble the Platter:
Arrange chilled shrimp on a serving platter with lemon wedges.
Place cocktail sauce in a small bowl in the center.
Garnish with fresh parsley.
