Coconut Toffee Chocolate Chip Cookie Bars

 

 

 

 

 

 

 

 

 

Ingredients:

1 cup unsalted butter, melted

1 cup packed brown sugar

1/2 cup white sugar

2 large eggs

2 teaspoons vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup sweetened shredded coconut

1 cup semi-sweet chocolate chips

3/4 cup toffee bits (like Heath Bits O’ Brickle)

 

Instructions:

Preheat the Oven:
Set your oven to 350°F (175°C) and prepare a 9×13-inch baking pan by greasing it or lining it with parchment paper.

Combine Wet Ingredients:
In a large bowl, whisk the melted butter with both sugars until smooth. Beat in the eggs and vanilla until the mixture is well blended.

Incorporate Dry Ingredients:
Add in the flour, baking soda, and salt, stirring just until combined. Be careful not to overmix.

Add Mix-ins:
Fold in the shredded coconut, chocolate chips, and toffee bits until evenly distributed throughout the batter.

Bake:
Spread the dough evenly into the prepared pan. Bake for 25 to 30 minutes, or until the top is golden and a toothpick inserted in the center comes out mostly clean with a few moist crumbs.

Cool and Cut:
Allow the bars to cool completely in the pan. Once cool, slice into squares and serve. These bars are chewy, rich, and full of coconut and toffee goodness in every bite!
