For the Salmon:
4 salmon fillets (skin-on, about 6 oz each)
1 tbsp olive oil
½ tsp salt
½ tsp black pepper
½ tsp paprika
½ tsp garlic powder
2 tbsp melted butter

½ cup lump crab meat
¼ cup cream cheese, softened
2 tbsp mayonnaise
2 tbsp grated Parmesan cheese
1 tbsp fresh parsley, chopped
1 tbsp green onion, finely chopped
½ tsp Old Bay seasoning
½ tsp lemon juice
¼ cup panko breadcrumbs

Prepare the Salmon:
Preheat oven to 400°F (200°C).
Make a slit in the center of each salmon fillet, being careful not to cut all the way through.
Make the Crab Filling:
In a bowl, mix crab meat, cream cheese, mayonnaise, Parmesan, parsley, green onion, Old Bay, lemon juice, and panko. Stir until well combined.
Stuff the Salmon:
Fill each salmon slit with a generous amount of crab mixture.
Brush the fillets with olive oil and season with salt, pepper, paprika, and garlic powder.
Bake the Salmon:
Place on a foil-lined baking sheet and drizzle with melted butter.
Bake for 15-18 minutes or until salmon is cooked through and golden brown on top.
