Creamy Cajun Shrimp & Chicken Pasta

8 oz fettuccine or penne pasta
1 lb shrimp, peeled & deveined
1 lb chicken breast, cut into bite-sized pieces
2 tbsp Cajun seasoning (divided)
2 tbsp olive oil
3 tbsp butter
4 cloves garlic, minced
1 cup heavy cream
1 cup chicken broth
1 cup Parmesan cheese, shredded
½ cup diced tomatoes (optional)
½ tsp smoked paprika
½ tsp onion powder
Salt & pepper to taste
Fresh parsley & extra Parmesan for garnish

 

Instructions:

1️⃣ Cook pasta according to package instructions. Drain & set aside.

2️⃣ Season shrimp & chicken with 1 tbsp Cajun seasoning.

3️⃣ Heat olive oil in a large pan over medium-high heat. Cook chicken until golden brown & fully cooked. Remove & set aside.

4️⃣ In the same pan, melt butter and cook shrimp for 2-3 minutes per side. Remove & set aside.

5️⃣ Lower heat, add garlic, and sauté for 30 seconds. Pour in heavy cream & chicken broth. Stir in Parmesan, remaining Cajun seasoning, smoked paprika, and onion powder. Simmer until sauce thickens.

6️⃣ Add pasta, shrimp, and chicken back into the pan. Toss to coat in the creamy sauce.

7️⃣ Garnish with fresh parsley & extra Parmesan. Serve hot and enjoy!
