1 lb large shrimp, peeled and deveined
6 oz beef or smoked sausage, thinly sliced
For the Pasta:
10 oz fettuccine pasta (or your favorite pasta)
For the Sauce & Veggies:
2 tbsp olive oil
½ yellow onion, thinly sliced
1 red bell pepper, thinly sliced
3 cloves garlic, minced
1 tsp Cajun seasoning (or Creole seasoning)
½ tsp dried oregano
½ cup crushed tomatoes
1 cup chicken stock
½ cup heavy cream
½ cup grated Parmesan cheese
For Seasoning:
Kosher salt and freshly ground black pepper, to taste
Instructions:
Prepare the Shrimp:
In a bowl, toss shrimp with Cajun seasoning, oregano, salt, and pepper.
Heat 1 tbsp olive oil in a large skillet over medium heat.
Sauté shrimp for 2–3 minutes per side until pink and lightly browned. Remove and set aside.
Cook the Sausage:
In the same skillet, heat the remaining 1 tbsp olive oil.
Add sliced sausage and brown on both sides. Remove and set aside.
Sauté the Veggies:
Add onions, bell peppers, and garlic to the skillet.
Cook for 5 minutes or until soft and fragrant.
Make the Sauce:
Stir in crushed tomatoes and chicken stock. Bring to a simmer.
Add heavy cream and Parmesan cheese, stirring until smooth and slightly thickened.
Taste and adjust seasoning with more Cajun spice, salt, or pepper if needed.
Cook the Pasta:
While the sauce simmers, cook pasta according to package directions.
Drain and add to the sauce.
Combine Everything:
Return shrimp and sausage to the skillet.
Toss well with the pasta until evenly coated and heated through.
Serve:
Garnish with chopped fresh parsley and extra Parmesan if desired.
