Creamy Coconut Curry Salmon with Tender Broccoli

– 4 salmon fillets
– 2 tablespoons olive oil
– 1 small onion, chopped
– 2 cloves garlic, minced
– 1 tablespoon fresh ginger, grated
– 1 tablespoon red curry paste
– 1 can (14 ounces) coconut milk
– 1 tablespoon fish sauce
– 1 tablespoon lime juice
– 2 cups broccoli florets
– Salt and pepper to taste
– Fresh cilantro, chopped (for garnish)

1. Cook Salmon: Heat olive oil in a skillet over medium heat, season salmon with salt and pepper, and sear until golden on both sides. Remove and set aside.

2. Prepare Sauce: In the same skillet, sauté onion, garlic, and ginger until fragrant. Add red curry paste and stir.

3. Simmer Curry: Pour in coconut milk, fish sauce, and lime juice. Simmer for 5 minutes.

4. Add Broccoli & Salmon: Add broccoli florets and cook until tender. Return salmon to the skillet, spoon sauce over, and heat through.

5. Garnish & Serve: Top with fresh cilantro and serve warm.

Delicious with steamed rice or naan!
