โ 4 salmon fillets
โ 2 tablespoons olive oil
โ 1 small onion, chopped
โ 2 cloves garlic, minced
โ 1 tablespoon fresh ginger, grated
โ 1 tablespoon red curry paste
โ 1 can (14 ounces) coconut milk
โ 1 tablespoon fish sauce
โ 1 tablespoon lime juice
โ 2 cups broccoli florets
โ Salt and pepper to taste
โ Fresh cilantro, chopped (for garnish)
Instructions:
1. Cook Salmon: Heat olive oil in a skillet over medium heat, season salmon with salt and pepper, and sear until golden on both sides. Remove and set aside.
2. Prepare Sauce: In the same skillet, sautรฉ onion, garlic, and ginger until fragrant. Add red curry paste and stir.
3. Simmer Curry: Pour in coconut milk, fish sauce, and lime juice. Simmer for 5 minutes.
4. Add Broccoli & Salmon: Add broccoli florets and cook until tender. Return salmon to the skillet, spoon sauce over, and heat through.
5. Garnish & Serve: Top with fresh cilantro and serve warm.
