Creamy Seafood Pasta with Shrimp and Mussels

 

 

 

 

 

 

Ingredients:

 

8 oz linguine or fettuccine
2 tbsp olive oil
2 tbsp butter
3 cloves garlic, minced
1/2 cup red bell pepper, diced
1/2 cup broccoli florets
10 large shrimp, peeled and deveined
10 mussels, cleaned and debearded
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp red pepper flakes (optional)
1/2 cup pasta water (as needed)
2 tbsp fresh parsley, chopped
Instructions:

Cook pasta according to package instructions. Reserve 1/2 cup of pasta water, then drain and set aside.
In a large pan, heat olive oil and butter over medium heat. Add garlic and sauté until fragrant.
Add red bell pepper and broccoli, cooking for 2-3 minutes until slightly tender.
Toss in shrimp and mussels, cooking until shrimp turn pink and mussels open. Remove any mussels that don’t open.
Lower heat and pour in heavy cream, Parmesan, salt, black pepper, and red pepper flakes. Stir well.
Add cooked pasta to the pan, tossing to coat. If the sauce is too thick, add a bit of reserved pasta water.
Garnish with fresh parsley and serve hot. Enjoy!
