Ingredients:
– 2 large chicken breasts, cut into bite-sized pieces
– 1 red bell pepper, chopped
– 1 small onion, finely sliced
– 2 cloves garlic, minced
– 1 teaspoon paprika
– 1/2 teaspoon ground cumin
– 1/2 teaspoon ground coriander
– 1/2 teaspoon chili flakes (adjust to taste)
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1 cup heavy cream
– 1/2 cup plain yogurt
– 1 tablespoon tomato paste
– 2 tablespoons olive oil
– 1 tablespoon butter
– Fresh parsley, chopped (for garnish)
– Cooked white rice (for serving)
Directions:
1. Heat olive oil and butter in a large pan over medium heat. Add the sliced onions and sauté until soft and translucent.
2. Add the minced garlic and chopped red bell pepper. Cook for another 2-3 minutes until the peppers start to soften.
3. Add the chicken pieces and cook until they are golden brown on all sides.
4. Sprinkle the paprika, cumin, coriander, chili flakes, salt, and black pepper over the chicken. Stir well to coat the chicken in the spices.
5. Stir in the tomato paste and cook for another minute to enhance the flavor.
6. Pour in the heavy cream and yogurt, mixing everything together. Let it simmer for about 10 minutes, stirring occasionally, until the sauce thickens and the chicken is fully cooked.
7. Taste and adjust seasoning if needed.
8. Serve hot over fluffy white rice, garnished with fresh chopped parsley.
