Ingredients:
– 2 boneless, skinless chicken breasts, cut into bite-size pieces
– Salt and pepper to taste
– 1 tablespoon olive oil
– 2 cloves garlic, minced
– 1 cup heavy cream
– 1/2 cup chicken broth
– 1/2 cup sun-dried tomatoes, chopped
– 1 teaspoon Italian seasoning
– 1/2 teaspoon red pepper flakes (optional)
– 8 ounces penne pasta
– 1/2 cup grated Parmesan cheese
– 2 tablespoons fresh basil, chopped
Directions:
- Season chicken pieces with salt and pepper.
- In a large skillet, heat olive oil over medium heat. Add chicken and cook until golden brown and cooked through. Remove chicken and set aside.
- In the same skillet, add garlic and sauté for 1 minute. Add heavy cream, chicken broth, sun-dried tomatoes, Italian seasoning, and red pepper flakes. Bring to a simmer.
- Meanwhile, cook pasta according to package instructions; drain.
- Return chicken to the skillet with the sauce and simmer for 5 minutes. Stir in cooked pasta and Parmesan cheese until well combined and cheese melts.
- Garnish with fresh basil before serving.
