Ingredients
For the Pasta & Lobster:
8 oz fettuccine (or pasta of choice)
2 lobster tails (cooked & chopped)
2 tbsp butter
2 cloves garlic (minced)
½ tsp red pepper flakes (optional)
Salt & black pepper (to taste)
For the Creamy Tomato Sauce:
1 tbsp olive oil
1 cup cherry tomatoes (halved)
½ cup tomato sauce or crushed tomatoes
½ cup heavy cream
¼ cup grated Parmesan cheese
¼ cup white wine (optional)
½ tsp paprika
1 tbsp fresh parsley (chopped)
Directions
1️⃣ Cook the Pasta:
Boil fettuccine in salted water according to package instructions.
Reserve ½ cup of pasta water, then drain and set aside.
2️⃣ Sauté the Lobster:
Heat butter in a pan over medium heat.
Add garlic, red pepper flakes, and lobster meat.
Cook for 2-3 minutes until lobster is opaque and lightly golden.
Remove from the pan and set aside.
3️⃣ Make the Creamy Tomato Sauce:
In the same pan, heat olive oil and add cherry tomatoes. Cook until softened.
Pour in tomato sauce, white wine (if using), and paprika. Simmer for 3-4 minutes.
Stir in heavy cream, Parmesan cheese, and a bit of reserved pasta water.
4️⃣ Combine & Toss:
Add the cooked pasta and lobster to the sauce. Toss to coat.
Season with salt, black pepper, and chopped parsley.
5️⃣ Serve & Enjoy:
Plate the pasta, garnish with extra Parmesan and parsley, and serve immediately!
