Ingredients
12 oz penne pasta
1 lb boneless, skinless chicken breasts, sliced into strips
1 tbsp olive oil
3 cloves garlic, minced
1 cup heavy cream
½ cup grated Parmesan cheese
1 cup cherry tomatoes, halved
2 cups fresh spinach
1 tsp Italian seasoning
Salt and pepper to taste
Fresh cracked black pepper for garnish
Directions
Cook penne according to package instructions until al dente. Drain and set aside.
Heat olive oil in a large skillet over medium heat. Season chicken with salt, pepper, and Italian seasoning, then cook for 5-7 minutes until golden and cooked through. Remove and set aside.
In the same skillet, add garlic and sauté for 1 minute until fragrant. Stir in heavy cream and Parmesan, bringing to a simmer. Cook for 2-3 minutes until slightly thickened.
Add cherry tomatoes and spinach, cooking until the spinach wilts.
Return the chicken to the skillet, and toss in the cooked pasta. Stir until everything is well coated in the creamy sauce.
Garnish with fresh cracked black pepper and serve hot.
