CRISPY BATTERED COD AND ONION RINGS PLATTER

Crispy Battered Cod:

1 1/2 lbs cod fillets, cut into pieces
1 1/2 cups all-purpose flour
1 cup cold club soda or beer
1 large egg
1 tsp baking powder
1 tsp garlic powder
1 tsp smoked paprika
Salt and black pepper to taste
Vegetable oil (for frying)
Lemon wedges (for serving)
Onion Rings:

2 large onions, sliced into rings
1 1/2 cups buttermilk
1 1/2 cups all-purpose flour
1/2 cup cornmeal
1 tsp smoked paprika
Salt and black pepper to taste

Prepare the Onion Rings:

Soak the onion slices in buttermilk for 15-20 minutes.
In a separate bowl, mix flour, cornmeal, smoked paprika, salt, and black pepper.
Fry the Onion Rings:

Heat vegetable oil in a deep skillet to 350°F (175°C).
Dredge the soaked onion rings in the flour mixture, shaking off excess.
Fry in batches for 2-3 minutes, or until golden brown.
Transfer to a paper towel-lined plate and season with salt.
Make the Batter for the Cod:

In a bowl, whisk together flour, baking powder, garlic powder, smoked paprika, salt, and black pepper.
Add cold club soda or beer and the beaten egg, mixing until smooth.
Fry the Cod:

Pat the cod fillets dry, then season with salt and black pepper.
Dip each piece into the batter, allowing excess to drip off.
Fry the cod in the same oil, cooking for 4-5 minutes per side, or until golden brown and crispy.
Transfer to a paper towel-lined plate to drain.

Arrange the crispy cod and onion rings on a serving platter.
