2 boneless, skinless chicken breasts
2 cups broccoli florets
1/2 cup cherry tomatoes, halved
2 tbsp olive oil
2 tbsp butter
3 cloves garlic, minced
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp smoked paprika
1/2 tsp dried oregano
1/4 tsp chili flakes (optional)
Step by Step:
Prepare the Chicken:
Season chicken breasts with salt, pepper, smoked paprika, and oregano.
Heat 1 tbsp olive oil in a pan over medium heat.
Cook the Chicken:
Add the chicken to the pan and cook for 5-6 minutes per side until golden brown.
Reduce heat, add butter and minced garlic, and spoon the melted butter over the chicken.
Cook until fully done, then remove from heat.
Roast the Broccoli & Tomatoes:
Preheat oven to 400°F (200°C).
Toss broccoli and cherry tomatoes with 1 tbsp olive oil, salt, and chili flakes.
Spread on a baking sheet and roast for 15 minutes, stirring once.
Assemble the Plate:
Place the garlic butter chicken on a plate with the roasted broccoli and tomatoes.
Serve & Enjoy:
Garnish with extra chili flakes or a squeeze of lemon juice for extra freshness!
