For the Lobster Tails:
4 lobster tails (4-6 oz each)
2 tbsp olive oil
1 tsp smoked paprika
½ tsp salt
½ tsp black pepper
½ tsp garlic powder
½ tsp cayenne pepper (optional, for a little heat)
For the Garlic Butter Sauce:
6 tbsp unsalted butter, melted
4 cloves garlic, minced
1 tbsp fresh parsley, chopped
1 tbsp fresh cilantro, chopped
1 tbsp fresh lemon juice
½ tsp red pepper flakes (optional)
½ tsp salt
½ tsp black pepper
Instructions:
1. Prepare the Lobster Tails:
Using kitchen scissors, cut through the top shell of the lobster tail lengthwise.
Gently spread the shell apart and pull the lobster meat out slightly, resting it on top for an elegant presentation.
Brush the lobster meat with olive oil and season with smoked paprika, salt, black pepper, garlic powder, and cayenne.
2. Make the Garlic Butter Sauce:
In a small saucepan over low heat, melt butter and add minced garlic.
Stir in parsley, cilantro, lemon juice, red pepper flakes, salt, and black pepper.
Remove from heat and set aside.
3. Grill the Lobster Tails:
Preheat your grill to medium-high heat (400°F / 200°C).
Place the lobster tails flesh-side down and grill for 3-4 minutes.
Flip the tails, baste generously with the garlic butter sauce, and grill for another 4-5 minutes until the meat is opaque and firm.
Remove from heat and brush with extra garlic butter sauce.
4. Serve & Enjoy:
Garnish with fresh parsley and lemon wedges.
