โ€“ 2 lobster tails, thawed and shells removed
โ€“ 4 large scallops, patted dry
โ€“ 1/4 cup unsalted butter
โ€“ 4 cloves garlic, minced
โ€“ 1 tablespoon fresh parsley, chopped
โ€“ 1 teaspoon lemon juice
โ€“ Salt and pepper, to taste
โ€“ Olive oil, for searing
โ€“ Lemon wedges, for serving

1. Begin by preparing the lobster tails. Using kitchen scissors, carefully cut the top of the lobster shell lengthwise down the middle. Gently pull the meat out and place it on top of the shell, so it sits above the shell. This presentation will enhance the dish.

2. In a small saucepan, melt the unsalted butter over low heat. Once melted, add the minced garlic. Stir continuously until the garlic is fragrant, about 2 minutes. Be careful not to let it brown.

3. Add the chopped parsley and lemon juice to the garlic butter mixture, stirring well to combine. Season with salt and pepper to taste. Remove from heat and set aside.

4. Heat a splash of olive oil in a skillet over medium-high heat. Once the oil is hot, carefully add the scallops to the pan, making sure not to overcrowd them.
