Ingredients:
1 ½ lbs sirloin steak, cut into bite-sized cubes
Salt and freshly cracked black pepper, to taste
1 tbsp olive oil
3 tbsp unsalted butter
4 cloves garlic, minced
1 tbsp fresh rosemary, finely chopped (plus extra sprigs for garnish)
1 tbsp fresh parsley, chopped (optional)
Instructions:
Season the Steak:
Pat steak bites dry with paper towels. Season generously with salt and black pepper on all sides.
Sear the Steak:
Heat olive oil in a cast iron skillet over high heat until just smoking. Add steak bites in a single layer (do in batches if necessary). Sear for 1–2 minutes per side until a golden-brown crust forms and centers are medium-rare. Remove and set aside.
Make the Garlic Herb Butter:
Reduce heat to medium. In the same skillet, add butter. Once melted, stir in minced garlic and chopped rosemary. Cook for 30–60 seconds, until fragrant.
Glaze the Steak:
Return steak bites to the skillet and toss to coat evenly in the garlic herb butter. Let simmer for 1 more minute to soak in flavor.
Serve:
Transfer to a white platter, spoon butter sauce over the top, and garnish with rosemary sprigs and parsley. Serve hot.
