Glazed Chicken Rice Bowl with Broccoli & Cucumber

 

 

 

 

Ingredients:

For the Chicken:

Chicken breast – 2 (diced)
Garlic cloves – 2 (minced)
️ Paprika – 1 tsp
Honey – 1 tbsp
Soy sauce – 2 tbsp
Olive oil – 1 tbsp

For the Broccoli:

Broccoli florets – 2 cups
Olive oil – 1 tbsp
Salt & pepper – to taste

For the Bowl:

Cooked white rice – 1 cup
Cucumber – 1 (thinly sliced)
Mashed avocado – 1/2 avocado
Salt – pinch

Prepare the Chicken:
Heat olive oil in a skillet over medium heat. Add chicken and cook until browned, about 5-7 minutes. Stir in garlic, paprika, soy sauce, and honey. Cook for another 5 minutes, letting the sauce thicken and coat the chicken.

Roast the Broccoli:

Toss broccoli florets with olive oil, salt, and pepper. Roast at 400°F (200°C) for 15 minutes or sauté in a skillet until tender and slightly charred.

Assemble the Bowl:

In a serving bowl, add a portion of cooked rice. Arrange glazed chicken, roasted broccoli, sliced cucumbers, and mashed avocado on top.

Serve & Enjoy:

Add a sprinkle of salt to the avocado and an optional drizzle of soy sauce over the bowl for added flavor.

Notes & Variations:

Swap white rice for brown rice or quinoa for a healthier alternative.
Add sesame seeds or chopped green onions for garnish.
Sriracha can be added to the chicken glaze for extra spice!
