STEP 1: MARINATE THE CHICKEN
– Prepare Marinade: In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, cumin, salt, and pepper.
– Marinate Chicken: Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or preferably overnight for maximum flavor.

STEP 2: MAKE THE TZATZIKI SAUCE
– Combine Ingredients: In a mixing bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, salt, and pepper. Mix well until smooth. If desired, add chopped fresh dill for extra flavor.
– Chill: Cover and refrigerate the tzatziki sauce for at least 30 minutes to allow the flavors to meld.

STEP 3: COOK THE CHICKEN
– Preheat Grill or Skillet: Preheat a grill or skillet over medium-high heat.
– Cook Chicken: Remove the chicken from the marinade and cook for about 5-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely browned. Remove from heat and let rest for a few minutes.
– Slice Chicken: Once rested, slice the chicken into thin strips.

STEP 4: ASSEMBLE THE GYROS
– Prepare Pita: Warm the pita bread or flatbreads on the grill or in a skillet for a few seconds on each side.
– Build Gyros: Place sliced chicken on the warmed pita, then top with tzatziki sauce, sliced tomatoes, red onion, and lettuce or mixed greens.

STEP 5: SERVE
– Enjoy: Serve the gyros immediately while warm, with extra tzatziki on the side if desired.
