1 lb beef chunks (sirloin or ribeye, cut into bite-sized pieces)
2–3 thick sausages (Argentinian, Italian, or your choice)
1 tbsp olive oil
Salt and freshly ground black pepper
For the Caramelized Onions:
2 large yellow onions, thinly sliced
1 tbsp olive oil
1 tbsp unsalted butter
Pinch of salt
Optional: 1 tsp balsamic vinegar or a pinch of sugar
For the French Fries:
3–4 large russet potatoes, cut into fries
2 tbsp vegetable oil (for oven-roasted) or oil for deep frying
Salt, to taste
Instructions:
Caramelize Onions: In a skillet over medium heat, add olive oil and butter. Cook onions slowly, stirring occasionally, for 25–30 minutes until deeply golden and soft. Add vinegar or sugar in the last few minutes if desired.
Cook Fries:
Oven Method: Preheat oven to 425°F (220°C). Toss fries in oil and spread on a baking sheet. Roast for 35–40 minutes, flipping halfway, until golden and crisp.
Frying Method: Heat oil to 350°F (175°C). Fry in batches for 4–6 minutes until golden and crisp. Drain on paper towels and salt immediately.
Grill Meat & Sausages: Preheat a grill or cast iron skillet over high heat. Toss beef chunks with olive oil, salt, and pepper. Grill beef until seared on all sides and cooked to preferred doneness (about 5–6 minutes total for medium-rare). Grill sausages until browned and cooked through, turning occasionally (about 10–12 minutes).
Combine & Plate: On a white plate, pile grilled beef and sliced sausages. Top with a generous spoonful of caramelized onions. Add a hearty serving of golden fries on the side.
Serve: For a rustic touch, serve over a newspaper-style paper liner. Perfect with chimichurri, mustard, or a cold beer.
