– 1 lb fresh calamari (tubes and tentacles), cleaned
– 2 tbsp olive oil
– 2 cloves garlic, minced
– 1 tsp lemon zest
– 1 tbsp lemon juice
– ½ tsp smoked paprika
– ½ tsp red pepper flakes (optional)
– Salt and black pepper, to taste
– 2 tbsp fresh parsley, chopped
– Wooden or metal skewers
– Extra lemon wedges (for serving)

1. *Prepare the Calamari:*
– If using whole calamari tubes, slice them into rings about ½ inch thick. Leave the tentacles whole.
– Pat dry with a paper towel to remove excess moisture.

2. *Marinate the Calamari:*
– In a bowl, mix olive oil, minced garlic, lemon zest, lemon juice, smoked paprika, red pepper flakes, salt, and black pepper.
– Add the calamari to the marinade, tossing to coat. Let it sit for 15-20 minutes.

3. *Prepare the Skewers:*
– If using wooden skewers, soak them in water for 30 minutes to prevent burning.
– Thread the calamari rings and tentacles onto the skewers in a spiral or alternating pattern.

4. *Grill the Calamari:*
– Preheat the grill to medium-high heat (about 400°F/200°C). Lightly oil the grates.
– Place the skewers on the grill and cook for about 2 minutes per side, or until the calamari is opaque with golden-brown grill marks. Avoid overcooking, as calamari can become tough.

5. *Garnish and Serve:*
– Remove from the grill and sprinkle with fresh parsley.
– Serve immediately with lemon wedges for an extra burst of citrus.
