Grilled Jerk Shrimp and Pineapple Skewers 

 

 

 

 

 

 

 

 

 

 

Ingredients:

1 lb large shrimp, peeled and deveined

2 cups fresh pineapple chunks

2 tbsp olive oil

1 tbsp lime juice

1 tbsp soy sauce or tamari

1 tbsp brown sugar

2 tsp Jamaican jerk seasoning (store-bought or homemade)

1 clove garlic, minced

1/4 tsp ground allspice

1/4 tsp cayenne pepper (optional for extra heat)

Salt and black pepper to taste

Bamboo or metal skewers (if bamboo, soak in water 30 min)

Marinate Shrimp: In a bowl, mix olive oil, lime juice, soy sauce, brown sugar, jerk seasoning, garlic, allspice, cayenne (if using), salt, and pepper. Toss in the shrimp and marinate for 15โ€“30 minutes.

Assemble Skewers: Alternate shrimp and pineapple chunks onto skewers.

Grill: Preheat grill (or grill pan) to medium-high. Grill skewers for 2โ€“3 minutes per side or until shrimp are pink and lightly charred.

Serve: Garnish with fresh herbs or an extra squeeze of lime if desired.
