Grilled prawn skewers with fresh herbs

800 g whole raw prawns (about 16 pieces)

4 cloves of garlic

3 tbsp. tablespoon of olive oil

1 tbsp. sweet paprika

1 pinch of Espelette pepper (optional)

1 tbsp. tablespoon of fresh lemon juice

1 tbsp. tablespoon chopped fresh flat-leaf parsley

1 tbsp. tablespoon chopped fresh coriander

1 tbsp. teaspoon of fine salt

1/2 tsp. teaspoon ground black pepper

8 wooden skewers (soaked in water for 30 minutes)

Preparation of prawns
Rinse the prawns carefully in cold water. Remove the shell, leaving the head and tail intact for added deliciousness, then cut the back to remove the black gut.

Making the flavored marinade
In a large bowl, mix the finely chopped garlic, olive oil, paprika, Espelette pepper, lemon juice, salt, pepper, parsley and coriander. Add the prawns and mix well with your hands so that they are perfectly soaked up in this sauce.

Rest (quick but essential)
Cover the bowl and let marinate at room temperature for 15 minutes. This allows the aromas to penetrate the flesh well.

Assembling the skewers
Thread the prawns onto the skewers, bending them slightly into a ā€œCā€ shape. Place 2 prawns per skewer.

Barbecue-style cooking
Heat a plancha, cast iron grill or barbecue. Place the skewers and grill them for 2 to 3 minutes on each side, until they are nicely browned and slightly caramelized. Brush them with the remaining marinade while cooking to enhance the flavor.
