1. Prepare the Salmon:
Preheat a grill or grill pan to medium-high heat.
Pat the salmon fillets dry with a paper towel. Brush them with olive oil and season with salt, black pepper, smoked paprika, and garlic powder.
Squeeze fresh lemon juice over the fillets.
2. Grill the Salmon:
Place the salmon fillets on the hot grill, skin-side down. Cook for about 4-5 minutes per side, or until grill marks appear and the salmon is cooked through.
Remove from the grill and let it rest for 2 minutes.
3. Make the Creamy Spinach Sauce:
In a pan over medium heat, melt the butter and sauté the minced garlic until fragrant (about 30 seconds).
Add the chopped spinach and cook until wilted.
Pour in the heavy cream and stir in the Parmesan cheese. Season with salt, black pepper, and red pepper flakes if using.
Let the sauce simmer for 2-3 minutes until slightly thickened.
4. Assemble and Serve:
Place the grilled salmon fillets on a wooden cutting board or serving plate.
Spoon the creamy spinach sauce along the side of each fillet.
Garnish with lemon slices and sprinkle with fresh parsley or cilantro.
Serve immediately and enjoy!
