Grilled Steak Medallions with Herb-Infused Compound Butter

 

 

 

 

 

 

 

 

Ingredients:

4 beef tenderloin medallions (about 6 oz each)

Salt and black pepper, to taste

1 tablespoon olive oil

For the Herb-Infused Compound Butter:

1/2 cup unsalted butter, softened

2 cloves garlic, minced

1 tablespoon fresh parsley, finely chopped

1 teaspoon fresh rosemary, finely chopped

1 teaspoon fresh thyme leaves

1/2 teaspoon lemon zest

Pinch of sea salt

In a small bowl, combine all compound butter ingredients. Mix well and form into a log using parchment paper. Chill for at least 30 minutes.

Preheat grill to medium-high heat.

Pat the steak medallions dry, brush lightly with olive oil, and season generously with salt and pepper.

Grill steaks for 4–5 minutes per side for medium-rare, or until desired doneness.

Remove steaks from grill and top immediately with slices of the chilled herb butter. Let rest 5 minutes before serving.
