Ingredients
For the Shrimp:
12 large shrimp, peeled and deveined, tails on
1 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
For the Crab Stuffing:
1/2 lb lump crab meat, drained and flaked
1/4 cup breadcrumbs
2 tbsp mayonnaise
1 tbsp Dijon mustard
1 tbsp fresh parsley, chopped
1 tbsp lemon juice
1/2 tsp garlic powder
1/2 tsp Old Bay seasoning
1/4 tsp black pepper
1/4 tsp paprika
For Topping:
1 tbsp melted butter
1/4 cup grated Parmesan cheese
Instructions
Prepare the Shrimp:
Preheat oven to 375°F (190°C).
Pat shrimp dry and season with olive oil, salt, and pepper. Set aside.
Make the Crab Stuffing:
In a bowl, combine crab meat, breadcrumbs, mayonnaise, Dijon mustard, parsley, lemon juice, garlic powder, Old Bay seasoning, black pepper, and paprika.
Mix gently until well combined.
Stuff the Shrimp:
Carefully cut a slit along the back of each shrimp (but not all the way through).
Stuff each shrimp with the crab mixture, pressing gently to secure the filling.
Bake the Shrimp:
Place stuffed shrimp in a baking dish.
Drizzle with melted butter and sprinkle with Parmesan cheese.
Bake for 15-20 minutes, until shrimp are cooked through and the stuffing is golden.
Serve:
Garnish with extra parsley and serve immediately.
