For the pancake buns:

1 cup all-purpose flour

2 tablespoons sugar

1 teaspoon baking powder

¼ teaspoon baking soda

Pinch of salt

1 egg

¾ cup milk

1 tablespoon melted butter

2 tablespoons maple syrup (plus extra for drizzling)

For the filling:

4 breakfast sausage patties or 4 slices of bacon

4 slices American cheese

4 eggs

Butter or oil (for cooking)

Make the pancake batter: In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt. Add egg, milk, melted butter, and maple syrup. Mix until just combined.

Cook the pancakes: Lightly grease a skillet and pour small, round pancakes (about 3–4 inches wide). Cook until bubbles form, flip, and cook the other side. You should get 8 mini pancakes.

Cook sausage or bacon: In a separate pan, cook sausage patties or bacon until crispy and cooked through.

Fry the eggs: In the same pan, fry eggs to your liking (you can use an egg ring for perfect round shape).

Assemble: On one pancake, layer sausage or bacon, a slice of cheese, and an egg. Top with another pancake.

Drizzle with maple syrup if desired and serve hot!
