Ingredients:
1 (3-4 lb) pork loin roast
3 tbsp olive oil
3 tbsp honey
4 cloves garlic, minced
1/4 cup soy sauce
2 tbsp Dijon mustard
1 tbsp apple cider vinegar
1 tsp smoked paprika
1 tsp dried thyme
Salt & black pepper to taste
Instructions:
Prepare the Pork Loin
1. Preheat oven to 375°F (190°C).
2. Pat the pork loin dry with paper towels.
3. Season with salt, pepper, paprika, and thyme.
Make the Glaze
1. In a bowl, whisk together honey, soy sauce, garlic, Dijon mustard, and vinegar.
2. Heat olive oil in a pan and sear the pork loin for 2-3 minutes per side until golden brown.
Roast to Perfection
1. Place the pork in a roasting pan.
2. Brush the glaze generously over the top.
3. Roast for 50-60 minutes, basting with glaze every 15 minutes.
4. Pork is done when it reaches an internal temperature of 145°F (63°C).
Rest & Serve
Let the roast rest for 10 minutes before slicing.
