1 ½ pounds Brussels sprouts, trimmed and halved
6 slices thick-cut bacon, chopped
2 tablespoons olive oil
Salt and black pepper to taste
3 tablespoons honey
1 tablespoon balsamic vinegar (optional for added tang)
2 cloves garlic, minced (optional for extra flavor)

Preheat the Oven:
Preheat your oven to 400°F (200°C).

Prepare the Brussels Sprouts:
Wash, trim, and halve the Brussels sprouts. Place them in a large mixing bowl.

Season and Toss:
Add the olive oil, salt, and black pepper to the Brussels sprouts. Toss them to coat evenly.

Add the Bacon:
Spread the Brussels sprouts on a baking sheet in a single layer. Scatter the chopped bacon pieces over the top.

Roast:
Place the baking sheet in the preheated oven and roast for 20-25 minutes, stirring halfway through. Roast until the sprouts are tender and caramelized, and the bacon is crispy.

Glaze:
While still hot, drizzle the honey and balsamic vinegar over the roasted Brussels sprouts and bacon. Add minced garlic if using. Toss well to coat evenly.

Final Roast:
Return to the oven for an additional 5 minutes to allow the glaze to set and become sticky.

Serve:
