For the Noodles and Meat Sauce:
12 oz wide egg noodles or pappardelle pasta
1 lb Italian sausage (mild or spicy), casings removed
1 tablespoon olive oil
1 medium onion, thinly sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
4 cloves garlic, minced
1/2 cup dry white wine
1 (14 oz) can diced tomatoes with juice
1/4 teaspoon red pepper flakes (optional for heat)
1 teaspoon Italian seasoning
Salt and black pepper to taste
1/4 cup fresh basil leaves, chopped
1/4 cup fresh parsley, chopped
1/2 cup grated Parmesan cheese (optional, for serving)

1. Cook the Noodles:
Bring a large pot of salted water to a boil.
Cook the noodles according to the package instructions until al dente.
Drain and set aside, reserving 1/2 cup of the pasta water.
2. Cook the Sausage and Vegetables:
Heat olive oil in a large skillet over medium-high heat.
Add Italian sausage and cook, breaking it up with a spoon, until browned and cooked through (about 5-7 minutes). Remove sausage and set aside.
In the same skillet, add the onions and bell peppers. Sauté for 4-5 minutes until softened.
Add garlic and cook for 1 minute until fragrant.
3. Deglaze and Simmer:
Pour in the white wine and scrape the bottom of the skillet to deglaze.
Let the wine simmer and reduce by half (about 3-4 minutes).
Stir in diced tomatoes with juice, red pepper flakes, Italian seasoning, salt, and pepper.
Return the cooked sausage to the skillet and simmer for 5-10 minutes, allowing the flavors to combine.
4. Combine and Finish:
Add the cooked noodles to the sauce and toss to coat evenly.
If the sauce is too thick, add some reserved pasta water a little at a time until desired consistency is reached.
Stir in chopped basil and parsley.
5. Serve:
Serve immediately with freshly grated Parmesan cheese on top, if desired.
Garnish with extra basil and parsley for a fresh touch.

For extra richness, add a splash of heavy cream to the sauce before serving.
Swap the sausage for ground beef, turkey, or plant-based meat for variation.
