1 lb Italian sausage links (mild or spicy)
3 bell peppers (mix of red, yellow, green), sliced
1 large red onion, sliced
2 tbsp olive oil
1 tsp garlic powder
1 tsp dried oregano
½ tsp smoked paprika
Salt & pepper to taste
Fresh parsley or basil (for garnish)
Optional: crusty rolls, cooked pasta, or rice for serving

1. Preheat Oven:
Preheat oven to 425°F (220°C) and line a large baking sheet with parchment paper or foil.
2. Prep the Veggies & Sausage:
In a bowl, toss sliced peppers and onions with olive oil, garlic powder, oregano, paprika, salt, and pepper.
Spread the veggies evenly on the sheet pan.
Nestle sausage links on top.
3. Roast to Perfection:
Roast for 25–30 minutes, flipping sausages and stirring veggies halfway through, until sausages are browned and cooked through and veggies are tender and slightly caramelized.
4. Serve & Enjoy:
Slice sausage if desired and serve with the roasted peppers and onions.
