– 1 lb Italian sausage (or chicken/turkey sausage for a lighter option)
– 1 red bell pepper, sliced
– 1 green bell pepper, sliced
– 1 yellow bell pepper, sliced
– 1 large onion, sliced
– 3 cloves garlic, minced
– 2 tbsp olive oil
– 1/4 cup chicken broth
– 1 tsp dried oregano
– 1 tsp dried basil
– 1/4 tsp red pepper flakes (optional)
– Salt and pepper to taste
– Fresh parsley, chopped (for garnish)
– Hoagie rolls or Italian bread (optional for serving)

1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Once hot, add the sausages and cook, turning occasionally, until they are browned all over, about 7 to 8 minutes. Remove them from the skillet and set aside.

2. In the same skillet, add the remaining tablespoon of olive oil. Toss in the sliced red, green, and yellow bell peppers, along with the sliced onion. Sauté for about 5 minutes until they start to soften. Toss in the minced garlic and sauté for another minute, allowing those beautiful aromas to fill your kitchen.

3. Sprinkle in the dried oregano, basil, red pepper flakes, salt, and pepper. Stir everything together and let it cook for an additional 2 to 3 minutes, letting the flavors meld beautifully.

4. Return the sausages to the skillet and pour in the chicken broth. Cover the skillet and let it simmer for 10 minutes, allowing the sausages to cook through and absorb all the delightful flavors.

5. Remove from heat and garnish with freshly chopped parsley. Serve your sausage and pepper mixture on its own or tuck it into hoagie rolls or slices of Italian bread for a hearty sandwich experience.
