Cook the Sausages:
In a large skillet over medium heat, add 1 tbsp olive oil. Add the sausage links and cook, turning occasionally, until browned on all sides and fully cooked through, about 10-12 minutes. Once done, remove from the skillet and set aside.

Sauté the Peppers and Onions:
In the same skillet, add the remaining 1 tbsp olive oil. Add the sliced red and green bell peppers and yellow onion. Season with a pinch of salt and pepper. Sauté for 5-7 minutes until the vegetables begin to soften.

Add Garlic and Seasonings:
Add the minced garlic and Italian seasoning to the skillet. Cook for an additional 1-2 minutes until fragrant.

Combine and Add Broth (Optional):
Return the cooked sausages to the skillet with the peppers and onions. If desired, add 1/4 cup chicken broth or white wine to deglaze the pan. Stir to combine and allow the mixture to simmer for about 5 minutes, allowing the flavors to meld together.

Serve:
Garnish with fresh basil or parsley. Serve hot in hoagie rolls, over pasta, or with a side of crusty bread.

Helpful Tips:
Add Spice: If you like a bit of heat, sprinkle some red pepper flakes into the peppers and onions while sautéing for an extra kick.
Extra Flavor: For a more intense flavor, slice the sausages and add them to the peppers and onions in the last few minutes of cooking to allow the sausages to absorb all the delicious flavors.
