2 ribeye or sirloin steaks (about 1-inch thick)
2 tbsp olive oil
3 tbsp unsalted butter
4 garlic cloves (minced)
1 tsp fresh thyme (or rosemary)
Salt & black pepper (to taste)

For the Roasted Potatoes:
3 large potatoes (cut into wedges)
2 tbsp olive oil
1 tsp garlic powder
½ tsp paprika
Salt & black pepper (to taste)
1 tbsp chopped parsley (for garnish)
Instructions
Step 1: Prepare the Potatoes
1. Preheat the oven to 400°F (200°C).
2. In a bowl, toss the potato wedges with olive oil, garlic powder, paprika, salt, and black pepper.
3. Spread them out on a baking sheet in a single layer.
4. Bake for 35-40 minutes, flipping halfway, until crispy and golden brown.

Step 2: Cook the Steak
1. Pat the steaks dry with a paper towel and season generously with salt and black pepper on both sides.
2. Heat a large cast-iron skillet or heavy pan over high heat. Add olive oil.
3. Once the pan is very hot, add the steaks. Sear for 3-4 minutes on each side (for medium-rare). Adjust time for your preferred doneness.
4. In the last 2 minutes of cooking, add butter, garlic, and thyme. Tilt the pan and spoon the melted butter over the steaks repeatedly to enhance flavor.
