For the Lamb Chops:

2 lamb chops (bone-in, about 1 inch thick)

2 tbsp olive oil

2 garlic cloves, minced

1 tbsp fresh rosemary, chopped (or 1 tsp dried)

Salt and pepper to taste

1 tbsp butter (for basting)

For the Creamy Mushroom Pasta:

8 oz spaghetti or linguine

2 tbsp butter

1 small onion, finely chopped

2 garlic cloves, minced

8 oz mushrooms, sliced (button or cremini work best)

1 cup heavy cream

1/2 cup grated Parmesan cheese

1/2 tsp dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta:

Bring a large pot of salted water to a boil. Cook the spaghetti or linguine according to the package instructions, until al dente. Drain and set aside, reserving about 1/2 cup of pasta cooking water.

Prepare the Lamb Chops:

Pat the lamb chops dry with paper towels. Rub them with olive oil, garlic, rosemary, salt, and pepper.

Heat a large skillet over medium-high heat. Once hot, add the lamb chops and sear for about 4-5 minutes per side for medium-rare, or longer for your desired level of doneness. Add butter during the last minute of cooking and spoon the melted butter over the chops. Remove from heat and let the lamb rest.

Make the Creamy Mushroom Sauce:

In the same skillet (without cleaning it), add butter and heat over medium heat. Add the onions and garlic and sauté for about 2 minutes, until softened.

Add the sliced mushrooms and cook until they release their moisture and begin to brown, about 5-7 minutes.

Pour in the heavy cream and bring to a simmer. Let it cook for 2-3 minutes, allowing the sauce to thicken. Stir in the Parmesan cheese and thyme, and season with salt and pepper. If the sauce gets too thick, add some reserved pasta water to reach your desired consistency.

Combine the Pasta and Sauce:

Add the cooked pasta to the skillet with the creamy mushroom sauce. Toss well to coat the pasta in the sauce. Adjust seasoning with salt and pepper.

Serve:

Plate the creamy mushroom pasta and top with a lamb chop. Garnish with fresh parsley and extra grated Parmesan, if desired.
