Ingredients:
For the Chicken Bites:
1½ lbs chicken breast, cut into bite-sized pieces
2 tablespoons butter
1 tablespoon olive oil
4 cloves garlic, minced
1 teaspoon paprika
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon red pepper flakes (optional)
Zest and juice of 1 lemon
2 tablespoons fresh parsley, chopped
For the Parmesan Linguine:
12 oz linguine pasta
2 tablespoons butter
1 tablespoon olive oil
3 cloves garlic, minced
1 cup heavy cream
½ cup Parmesan cheese, grated
½ teaspoon salt
½ teaspoon black pepper
Directions:
1. Cook the Pasta
Bring a large pot of salted water to a boil.
Add linguine and cook until al dente, then drain and set aside.
2. Make the Chicken Bites
Heat butter and olive oil in a large skillet over medium-high heat.
Add chicken pieces, season with paprika, salt, black pepper, and red pepper flakes.
Cook for 4-5 minutes, stirring occasionally, until golden brown.
Add garlic, lemon zest, and lemon juice, and cook for another 2 minutes.
Stir in fresh parsley, then remove from heat.
3. Prepare the Parmesan Linguine
In the same skillet, melt butter and add olive oil.
Sauté garlic for 30 seconds, then pour in heavy cream.
Stir in Parmesan cheese, salt, and black pepper, letting it thicken slightly.
Toss the drained linguine in the sauce, ensuring even coating.
4. Assemble & Serve
Plate the Parmesan linguine and top with Lemon Garlic Butter Chicken Bites.
Garnish with extra Parmesan and fresh parsley.
