For the Salmon and Shrimp:

2 salmon fillets (skin-on or skinless, your preference)

12-16 shrimp (peeled and deveined)

2 tbsp olive oil

1 tbsp fresh lemon juice

1 tsp garlic powder

1 tsp smoked paprika

1/2 tsp salt

1/2 tsp black pepper

1 tsp dried oregano

1 tsp dried parsley

1 tbsp butter (for stuffing)

2 cloves garlic (minced)

2 tbsp fresh spinach (chopped, optional for stuffing)

For the Lemon and Herb Sauce:

1 tbsp olive oil

1 tbsp butter

2 cloves garlic (minced)

1/2 cup chicken broth (or vegetable broth)

1 tbsp fresh lemon juice

Salt and pepper, to taste

Fresh lemon slices (for garnish)

1. Preheat the Oven:

Preheat your oven to 375°F (190°C).

2. Prepare the Shrimp:

In a small skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat.

Add the minced garlic and sauté for about 1 minute until fragrant.

Add the shrimp, seasoning with salt, black pepper, paprika, and garlic powder. Cook for 2-3 minutes, until the shrimp are opaque and cooked through. Set aside to cool slightly.

3. Prepare the Salmon:

Place the salmon fillets on a baking dish lined with parchment paper or lightly greased with olive oil.

Using a sharp knife, create a slit in the center of each salmon fillet, creating a pocket for the stuffing. Be careful not to cut all the way through.

4. Make the Stuffing:

In the same skillet you used for the shrimp, sauté the chopped spinach (if using) in any leftover butter and oil from the shrimp until wilted.

Chop the cooked shrimp into smaller pieces and mix them with the spinach and the minced garlic, and stuff the salmon fillets with this mixture.

5. Bake the Salmon:

Drizzle the stuffed salmon fillets with olive oil and fresh lemon juice. Season with oregano, parsley, salt, and pepper.

Place fresh lemon slices around the salmon in the baking dish for extra flavor.

Bake the salmon in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

6. Prepare the Lemon Garlic Sauce:

While the salmon is baking, make the sauce. In a small saucepan, melt 1 tablespoon of butter and 1 tablespoon of olive oil over medium heat.

Add the minced garlic and sauté for about 1 minute until fragrant.

Pour in the chicken broth and lemon juice, stirring to combine. Let the sauce simmer for 3-5 minutes, allowing it to reduce slightly. Season with salt and pepper to taste.

7. Serve the Dish:

Once the salmon is done, remove it from the oven.

Drizzle the lemon garlic sauce over the stuffed salmon fillets.

Garnish with fresh parsley, and serve with steamed vegetables, mashed potatoes, or rice for a complete meal.
