Ingredients:
2 tablespoons olive oil
1/4 teaspoon crushed red pepper flakes
3 cloves garlic, minced
1 pint cherry tomatoes, halved
1/4 cup vegetable broth
3 tablespoons fresh lemon juice (divided)
1/2 cup fresh basil, chopped
1/2 teaspoon lemon zest
1/2 teaspoon salt
1 teaspoon granulated sugar
1/4 teaspoon black pepper
1 1/2 pounds cod fillets
Salt and pepper to taste
Directions:
1. In a pan, heat olive oil over medium heat. Sauté red pepper flakes and garlic for 1 minute.
2. Add tomatoes, cooking until softened, about 9-12 minutes.
3. Pour in vegetable broth and 1 tablespoon lemon juice. Simmer briefly.
4. Stir in basil, remaining lemon juice, lemon zest, salt, sugar, and pepper. Cook 2 minutes.
5. Pat cod dry and season with salt and pepper.
6. Heat olive oil in another pan. Sear cod for 3 minutes per side until flaky.
7. Pour tomato basil sauce over cod and heat for 1 minute.
8. Serve immediately with rice, pasta, or vegetables.
