In a mixing bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5 minutes until foamy. Add the flour, salt, melted butter, and rosemary, then mix until a dough forms. Knead the dough for 5-7 minutes until it becomes smooth and elastic.

Step 2: Let the Dough Rise
Place the dough in a lightly greased bowl, cover with a clean towel, and let it rise in a warm spot for 1 hour, or until doubled in size.

Step 3: Shape and Fill the Pretzels
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Divide the dough into 6-8 equal pieces. Roll each piece into a long rope, flatten it slightly, and place a line of shredded mozzarella down the center. Pinch the edges together to seal, then shape into a pretzel or a circular ring.
Step 4: Prepare the Egg Wash and Bake
Brush each pretzel with egg wash and sprinkle with grated Parmesan and extra rosemary. Bake for 15-18 minutes, or until golden brown.
Step 5: Serve and Enjoy
Let the pretzels cool slightly before serving. Enjoy them warm for the best cheesy experience!
