2 cups graham cracker crumbs
1/2 cup melted butter
2 cups cream cheese, softened
1 cup powdered sugar
2 cups heavy whipping cream
1 can (20 oz) crushed pineapple, drained
1 can (20 oz) pineapple rings, drained
Fresh raspberries for garnish
Whipped cream for topping
Instructions
In a medium bowl, mix together the graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of a 9Γ13-inch baking dish to form the crust.
In a large bowl, beat the cream cheese and powdered sugar until smooth and creamy.
In a separate bowl, whip heavy cream until stiff peaks form. Gently fold whipped cream into cream cheese mixture.
Spread half of cream cheese mixture over crust. Evenly distribute crushed pineapple over cream cheese layer.
Spread remaining cream cheese mixture over pineapple layer.
Place pineapple rings on top and garnish with fresh raspberries.
Add dollops of whipped cream around pineapple rings for extra zing.
Refrigerate for at least 4 hours, or until set. Serve chilled.
