1 tbsp olive oil or butter
1 green bell pepper, diced

1 tbsp butter
1 tbsp all-purpose flour
1 cup milk (warm)
1 ½ cups shredded provolone or mozzarella (or a blend)

Instructions:
1. Prepare the Fries:
Cook the French fries according to package instructions (bake or fry until golden and crispy).
Season with salt and set aside.
2. Cook the Steak and Veggies:
In a skillet over medium-high heat, heat olive oil or butter.
Add sliced onions and green bell pepper. Sauté until softened (about 4–5 minutes).
Add the steak, garlic salt, and black pepper. Cook until the steak is browned and cooked through (about 3–5 minutes). Remove from heat.
3. Make the Cheese Sauce:
In a saucepan, melt butter over medium heat.
Whisk in the flour and cook for 1 minute to make a roux.
Slowly whisk in warm milk until smooth and thickened.
Add shredded cheese and stir until fully melted. Season with salt and pepper.
4. Assemble:
Place fries on a serving platter or oven-safe dish.
Top with the hot steak mixture.
Drizzle generously with cheese sauce.
5. Optional:
Garnish with chopped parsley, hot sauce, or extra shredded cheese.
Broil for 2–3 minutes for a bubbly, golden top.
