Ingredients:

– 1 kg of pork loin
– 2 lemons (juice and zest)
– 4 cloves of garlic, minced
– 2 tablespoons of olive oil
– 2 tablespoons chopped fresh thyme
– 1 teaspoon of salt
– 1/2 teaspoon ground black pepper

1. In a small bowl, whisk together the lemon juice, lemon zest, minced garlic, olive oil, fresh thyme, salt, and pepper.
2. Place the pork tenderloin in a shallow bowl and pour the lemon-thyme mixture over it. Make sure the tenderloin is well covered in the marinade.
3. Cover the container and let the tenderloin marinate in the refrigerator for at least 2 hours, or ideally overnight for a more intense flavor.
4. Preheat the oven to 200°C (400°F).
5. Remove the pork tenderloin from the marinade and place on a baking sheet. Discard excess marinade.
6. Bake the tenderloin for 40-45 minutes, or until the internal temperature reaches 63°C (145°F). Flip the tenderloin halfway through cooking so it browns on all sides.
7. Remove the tenderloin from the oven and let it rest for 10 minutes before cutting.
8. Cut the pork loin into slices and serve hot with your favorite garnish.
