Ingredients:
– 1/4 (about 1 kilogram or 2.2 pounds) chicken leg
– 3 oranges
– 2 oranges, juiced
– 1 tsp red chili flakes
– 4 sprigs of thyme
– 1/2 cup maple syrup
– 1/3 cup soy sauce (or gluten-free soy sauce like tamari)
– 1/4 cup olive oil
Instructions:
1. Preheat the oven to 200°C (400°F).
2. Prepare the chicken: Place the chicken leg in a roasting pan or a baking dish. Pat the chicken dry with paper towels.
3. Make the marinade:
– Zest and juice the 3 oranges. Combine the zest and juice in a bowl.
– Add the juice of the 2 additional oranges to the bowl.
– Stir in the maple syrup, soy sauce (or tamari), olive oil, red chili flakes, and fresh thyme sprigs. Mix well to combine.
4. Marinate the chicken: Pour the marinade over the chicken leg. Make sure the chicken is well-coated. You can let it marinate for about 20-30 minutes for extra flavor (or refrigerate it for up to a few hours if you have time).
5. Roast the chicken: Place the chicken in the preheated oven and roast for 35-45 minutes, or until the chicken reaches an internal temperature of 75°C (165°F) and the skin is crispy and golden. Occasionally baste the chicken with the marinade to keep it moist.
6. Serve: Remove the chicken from the oven and let it rest for a few minutes before serving. Serve with your favorite sides and enjoy!
