Ingredients:

For the Cookie Base:
โ€“ 1 cup unsalted butter, softened
โ€“ 1 cup brown sugar, packed
โ€“ 1/2 cup granulated sugar
โ€“ 2 large eggs
โ€“ 2 teaspoons vanilla extract
โ€“ 2 1/2 cups all-purpose flour
โ€“ 1 teaspoon baking soda
โ€“ 1/2 teaspoon salt

For the Pecan Filling:
โ€“ 1 cup corn syrup
โ€“ 1 cup brown sugar, packed
โ€“ 1/2 cup unsalted butter, melted
โ€“ 4 large eggs
โ€“ 2 teaspoons vanilla extract
โ€“ 2 cups pecans, chopped
โ€“ 1 cup salted caramel sauce

 

Directions:

Step 1: Prepare The Cookie Base
โ€“ Preheat your oven to 350ยฐF (175ยฐC) and grease a 9ร—13 inch baking pan.
โ€“ In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
โ€“ Beat in the eggs one at a time, then stir in the vanilla extract.
โ€“ In another bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients and mix until just combined.
โ€“ Press the cookie dough evenly into the prepared baking pan.

Step 2: Make The Pecan Filling
โ€“ In a mixing bowl, combine the corn syrup, brown sugar, melted butter, eggs, and vanilla extract. Whisk together until well blended.
โ€“ Stir in the chopped pecans and half of the salted caramel sauce.

Step 3: Assemble The Bars
โ€“ Pour the pecan filling evenly over the cookie base in the baking pan.
โ€“ Drizzle the remaining salted caramel sauce on top of the pecan filling.

Step 4: Bake
โ€“ Bake in the preheated oven for 30-35 minutes, or until the filling is set and the edges are golden brown.
