– 2 lbs chicken wings
– 1 tablespoon olive oil
– 1/4 cup soy sauce
– 1/4 cup vinegar
– 1/4 cup orange juice
– 2 tablespoons honey
– 2 cloves garlic, minced
– 1 small onion, finely chopped
– 1 tablespoon grated ginger
– 2 Scotch bonnet peppers, seeded and chopped
– 1 tablespoon ground allspice
– 1 teaspoon ground nutmeg
– 1 teaspoon ground cinnamon
– Salt and pepper to taste
– Fresh thyme leaves for garnish

- Preheat your oven to 400°F (200°C).
- In a large bowl, combine olive oil, soy sauce, vinegar, orange juice, honey, garlic, onion, ginger, Scotch bonnet peppers, allspice, nutmeg, cinnamon, salt, and pepper. Mix well to create the jerk marinade.
- Add the chicken wings to the marinade and toss to coat evenly. Let marinate for at least 1 hour in the refrigerator, though overnight is best for deeper flavor.
- Arrange the chicken wings on a baking sheet lined with parchment paper, and pour any remaining marinade over the top.
- Bake in the preheated oven for 45-50 minutes, or until the chicken wings are golden brown and crispy.
- Garnish with fresh thyme leaves before serving.
