Sautéed Sausage with Bell Peppers and Onions

 

 

 

 

 

 

 

Ingredients:

1 lb (450g) pork sausage (mild or spicy, based on preference)
2 tbsp olive oil
1 large onion, thinly sliced
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
3 garlic cloves, minced
1 tsp dried oregano
1/2 tsp crushed red pepper flakes (optional, for heat)
Salt and pepper, to taste
Fresh basil or parsley (for garnish, optional)
Crusty bread or rolls (optional, for serving)

Instructions:

Cook the sausage: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sausage links and cook until browned on all sides, about 8-10 minutes. Remove the sausage from the pan and set aside.

Sauté the veggies: In the same skillet, add the remaining tablespoon of olive oil. Toss in the sliced onion and bell peppers, and sauté for 5-7 minutes until they soften and begin to caramelize.

Add garlic and seasoning: Stir in the minced garlic, oregano, and red pepper flakes (if using). Continue cooking for another 1-2 minutes, letting the garlic become fragrant.

Combine and finish cooking: Slice the browned sausage into 2-3 inch pieces and return them to the skillet with the peppers and onions. Cook everything together for an additional 5 minutes until the sausage is fully cooked through.

Season and serve: Season with salt and pepper to taste. Garnish with fresh basil or parsley if desired. Serve with crusty bread or rolls on the side.❤️
