Ingredients:
1 1/2 pounds beef tenderloin, cut into medallions
Salt and pepper, to taste
2 tablespoons olive oil
4 tablespoons unsalted butter, divided
4 cloves garlic, minced
1/4 cup beef broth
1 tablespoon fresh thyme, chopped
1 tablespoon fresh parsley, chopped
1 tablespoon lemon juice
Directions:
Step 1: Prepare the Beef Medallions
Season the beef medallions generously with salt and pepper on both sides.
Heat the olive oil in a large skillet over medium-high heat.
Step 2: Cook the Beef Medallions
Add the beef medallions to the hot skillet and sear for 3-4 minutes on each side, or until they reach your desired level of doneness. Remove from the skillet and set aside.
Step 3: Make the Garlic Butter Sauce
In the same skillet, reduce the heat to medium and add 2 tablespoons of butter.
Once the butter has melted, add the minced garlic and cook for about 1 minute, until fragrant.
Pour in the beef broth, scraping up any browned bits from the bottom of the skillet.
Stir in the fresh thyme and parsley, then add the remaining 2 tablespoons of butter and lemon juice, stirring until the butter is melted and the sauce is well combined.
Step 4: Combine and Serve
Return the beef medallions to the skillet, spooning the garlic butter sauce over them.
Cook for an additional 1-2 minutes to heat through and coat the medallions in the sauce.
Serve immediately, garnished with additional fresh parsley if desired.
