Shrimp and Pepper Stir-Fry

 

 

 

 

 

 

Ingredients:

1 lb (450g) large shrimp, peeled and deveined
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
2 tablespoons olive oil
3 cloves garlic, minced
1-inch piece of ginger, minced
3 tablespoons soy sauce
2 tablespoons oyster sauce
1 tablespoon honey
1 teaspoon sesame oil
1/4 teaspoon red chili flakes (optional)
2 green onions, sliced
Sesame seeds for garnish

Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of olive oil.
Add shrimp to the skillet and cook for 2-3 minutes on each side, until pink and opaque. Remove and set aside.
In the same skillet, add the remaining olive oil. Stir-fry the garlic and ginger for 30 seconds until fragrant.
Toss in the red, yellow, and green bell peppers. Stir-fry for 3-4 minutes until slightly tender but still crisp.
In a small bowl, whisk together soy sauce, oyster sauce, honey, sesame oil, and chili flakes. Pour the mixture over the peppers, stirring well.
Return the shrimp to the skillet, and toss to combine. Cook for another 2 minutes until heated through.
Remove from heat and garnish with sliced green onions and sesame seeds. Serve immediately with steamed rice or noodles.
