1 pound large shrimp, peeled and deveined
1/2 pound smoked sausage, sliced
2 ears of corn, cut into 4 pieces each
1 pound baby red potatoes, halved or quartered
2 tablespoons olive oil
2 teaspoons Cajun or Creole seasoning
2 cloves garlic, minced
Salt and pepper to taste
Lemon wedges and fresh parsley for garnish

Preheat your grill to medium-high heat or your oven to 425°F (220°C).
In a large bowl, combine shrimp, sausage, corn, and potatoes. Drizzle with olive oil and season with Cajun seasoning, garlic, salt, and pepper. Toss until everything is well-coated.
Divide the mixture into four equal portions and place each on a large sheet of aluminum foil. Fold the edges of the foil over the ingredients to seal into packets.
Cook the foil packets on the grill for about 10-12 minutes, or bake in the oven for 20-25 minutes until the shrimp turn pink and the potatoes are tender.
Carefully open the packets (watch for steam) and serve immediately, garnished with lemon wedges and fresh parsley.
