Shrimp
• ½ pound shrimp, peeled and deveined
• 1 tbsp olive oil
• 1 clove garlic, minced
• 1 tsp chili powder
• ½ tsp ground cumin
• Salt & pepper to taste

 

Rice
• 1½ cups cooked jasmine or basmati rice
• 1 tbsp olive oil
• Salt to taste

 

Bowl Toppings
• 1 large avocado, diced
• ½ cup cherry tomatoes, halved
• 2 tbsp chopped red onion (optional)
• Lime wedges for garnish

Cilantro Lime Sauce
• ½ cup plain Greek yogurt
• 1 tbsp olive oil
• 2 tbsp fresh lime juice
• 2 tbsp chopped fresh cilantro
• 1 clove garlic, minced
• Salt & pepper to taste
• Water (to thin if needed)

1. Prepare the Shrimp
• Toss shrimp with olive oil, garlic, chili powder, cumin, salt, and pepper.
• Heat a skillet over medium-high heat and cook shrimp for 2–3 minutes per side until pink and fully cooked

2. Cook the Rice
• Toss warm cooked rice with olive oil and a pinch of salt.
• Keep warm.

 

3. Make the Cilantro Lime Sauce
• In a small bowl, whisk together Greek yogurt, olive oil, lime juice, cilantro, garlic, salt, and pepper.
• Add water a teaspoon at a time until sauce reaches a creamy, pourable consistency.

 

4. Assemble the Bowls
• Start with a base of rice.
• Top with cooked shrimp, diced avocado, cherry tomatoes, and red onion.
• Drizzle generously with cilantro lime sauce.
• Garnish with lime wedges and additional chopped cilantro.
